Spinach with Garlic, Lemon and Olive Oil

Popeye's favorite food gets a flavor boost from lemon
juice and garlic in this classic side dish recipe.

*great combined with canelli beans, tossed with
broiled salmon and linguini

1 large package fresh spinach, cleaned
1/3 C water
2 cloves garlic, crushed
1/4 C olive oil
2 T lemon juice
salt and pepper to taste

Serves 6

Peel garlic cloves and flatten with the broad side of a knife to crush. Place crushed garlic in olive oil and set aside (for a stronger garlic flavor, do this as much as a day in advance and refrigerate oil). Heat water in large pot over high heat. Add spinach and cook until just wilted. Drain spinach and transfer to bowl. Remove garlic from oil and drizzle lemon juice, then the oil over spinach. Season with salt and pepper to taste and toss to coat.
