Morroccan Pumpkin and Lentils (WHole Foods)

serves 8

2 T EVOO
1 large onion, diced
1 jalapeno, seeded slied
14.5 oz can diced tomatoes
1 c green lentils, rinsed
1 T paprika
1/4 t cayeene
1 t cumin
2# pumpkin, peeled, seeded, cubed
1/2 c tomato puree
1/4 c chopped cilantro (garnish)

Heat oil in large saucepan over med-high. Add onion, chili, saute 10 mins. Add tomatoes, lentils, spices and cook 2-3 mins. Stir in pumpkin, tomato puree, 2.5c water. Season with s/p. Reduce to med- low and cook 40 mins, stirring occasionally and adding more water if needed. Season with s/p. Garnish with cilantro. Serve hot.
