Serves 4
1# boneless chicken thighs, cut into bite sized pieces
3 T flour
2 T canola
2 c broth
16 oz mixed vegs, thawed
2 T chopped parsley
1 t dried thyme
14 oz puff pastry, thawed, unfolded, chilled
1 large egg, beaten
400 oven. Dust chicken iwth flour and season with s/p. Heat oil in large skillet over med-high. Brown 3-4 mins working in batches. Return all to pan and stir in 3 T flour. Add broth, vegs, parsley and thyme. Simmer 10 mins. Set aside. Cut 4 circles of pastry. Cut 4 small holes in pastry. Fill 4 ovenproof dishes with chicken mixture. Top with pastry circles and brush with egg. Bak 15-20 mins.
