Stir Fry Chicken & Bok Choy

 * 2 TBS low-sodium chicken or vegetable broth
   * 1 cup chopped scallions
   * 2 TBS fresh minced ginger
   * 2 skinless, boneless chicken breasts, cut into bite-sized pieces
   * 1½ cups sliced fresh shiitake mushrooms
   * 4 cups chopped bok choy
   * 2 TBS soy sauce
   * 1 TBS rice vinegar
   * salt and white pepper to taste
   * pinch of red pepper flakes


Directions:

  1. Heat broth in a stainless steel skillet.
  2. When broth begins to steam, add scallions and Healthy Saute for 2 minutes.
  3. Add ginger and continue to sauté for another minute.
  4. Add chicken and continue to sauté.
  5. After 2-3 minutes, add shiitake mushrooms and bok choy. Continue to sauté for another 3-4 minutes, and then add soy sauce, rice vinegar, salt, and pepper. Serves 4

Crockpot Chinese Sweet & Sour Chicken

Serves 4-6 (really 4 because its so yummy!)
3-4 lbs of chicken (whole or pieces)
1/3 c soy sauce
1/3 c packed light brown sugar
1/4 c water
1/4 c apple juice or sherry (I use any sweet juice on hand)
3 T catsup
1/2 t red pepper flakes (optional)
2 green onions, trimmed and halved (I just chop and toss in)
1 clove garlic, pressed
2 T cornstarch + 1 T cold water
2 T sesame seeds (toasted)

Wash and dry chicken.  Remove giblets and neck (if using a whole chicken) and cut off excess fat.  Put in cooker, breast side up (if whole).  Mix soy sauce, brown sugar, water, sherry, catsup, red pepper flakes, green onions, garlic in small bowl and pour over chicken.  Cover and cook on HIGH for 3.5 - 4.5 hours until temp on an instant read thermometer inserted in the thickest part of the thigh registers 180.  (I just cook it until it's falling off the bones)

Transfer chicken to platter and mix cornstartch with water and stir into the remaining sauce.  Stir constantly while cooking still on high, and it will thicken.  Spoon over chicken and sprinkle with sesame seeds and serve.

TJ's Enchilada Casserole

Olive Oil (for pan)
1 bottle TJ’s Enchilada Sauce
1 package TJ’s Frozen Carne Asada, heated to package directions
6 TJ’s Green Onions, sliced, green tops preserved for garnish
2 tbsp TJ’s Sliced Jalapeños, minced
1 can TJ’s Sliced Black Olives
1 package TJ’s Corn Tortillas, cut into strips
1 package TJ’s Mexican Shredded Cheese Blend
2 TJ’s Avocados, sliced
Pre-heat the oven to 450°. Swab bottom of a baking dish (appx. 8” x8”) with olive oil & a small amount of enchilada
sauce; set aside. In a bowl, mix carne asada, green onions, jalapeños and 3 tbsp of sliced olives together with a small
amount of enchilada sauce. Cover bottom of dish with a layer of tortilla strips. Top with half of carne asada mixture,
followed by a small amount of sauce and about one-fourth of the cheese. Repeat second layer in the same order. Top
second layer with strips of tortillas, remainder of sauce and remainder of cheese. Garnish with remainder of olives and
green onion tops. Place in oven and bake until cheese is melted, the edges are browned and sauce is bubbly; about 20-30
minutes. Remove from oven and sit for 10 minutes before cutting. Top with slices of Avocado. WOW! Enjoy.
Serves: 6-8
Cooking Time: 30-40 minutes

Roasted Chicken Breasts with Salsa Verde

3 tbsp salt-cured capers, rinsed and drained
2 oil-packed anchovy fillets, rinsed and chopped
3 or more cloves garlic, chopped
1 tbsp fresh lemon juice
Grated zest of 2 lemons
1/3 cup extra-virgin olive oil
2-1/2 cups fresh flat-leaf parsley
Extra-virgin olive oil for brushing

Preparation

Preheat an oven to 400 degrees E

To make the salsa verde, in a food processor, combine the capers, anchovy fillets, garlic, lemon juice, and three-fourths of the zest. Purée until smooth. Add the 1/3 cup olive oil and process again until smooth, scraping down the sides of the bowl as necessary. Add the parsley and pulse until combined.

To stuff each chicken breast, gently pull the skin from the meat and tuck one-sixth of the salsa verde in the pocket that forms between them, distributing the salsa evenly. Arrange the stuffed chicken breasts in a baking dish and brush them with a little olive oil.

Roast until the chicken breasts are tender, about 30 minutes. Remove from the oven and place on individual plates or a platter. Scatter the remaining lemon zest over the top and serve.

CROCK POT CHICKEN CACCIATORE

3-4 lbs. boneless/skinless thighs and breasts
1 large onion, thinly sliced
2 large red or green bell peppers, sliced
3 cloves garlic, crushed
1/2 teaspoon each basil and oregano
1 (6 oz.) can tomato paste
fresh mushrooms, sliced
2 bay leaves
1 (8 oz.) can stewed tomatoes with chiles
salt and pepper to taste
2 cups burgundy wine
Parmesan cheese, for sprinkling before serving
Place sliced onions on bottom of crock pot. Add chicken. Stir together remaining ingredients and pour over chicken.
Cook on low 7-9 hours or high 3-4 hours. Serve over pasta, with a salad on the side.

Chicken Mushroom Popover Casserole

Browned chicken pieces line a casserole and then a special, savory popover batter is poured over. The batter puffs up and the result is golden hunks of chicken, nested in a crispy, tender golden popover crust. Serve the optional mushroom sauce on the side with a green salad.

Boned and skinned chicken breast halves cut into 1 inch pieces

3 eggs
1.5c
Skim milk
1 T oil
0.5t salt + 0.25t pepper
1.5c flour
1 T fresh minced parsley
1 can
Campbell's 98% Fat-Free Cream of Mushroom soup
0.5c white wine
1 t
Fresh parsley minced
0.5c mushrooms sliced
0.5c carrots, diced
1 large potato chopped
1 med onion chopped

  • Preheat oven to 350F. Saute chicken in nonstick skillet that has been sprayed with Pam, until brown on all sides. Add potatoes, onions and carrots, and cook 10 mins, or until veggies begin to cook. Season with salt & pepper.
  • Place in a 9x13-inch casserole dish that has been sprayed with Pam.
  • Blend eggs, milk, oil, salt & pepper, flour and parsley well with a wire whisk. Pour over chicken/veggie mixture. Bake 55-60 mins, or until batter has puffed up and turned golden brown.
  • Meanwhile, prepare sauce. Combine mushroom soup, wine, parsley and stir over low heat to combine. Stir in mushrooms. Season to taste with salt & pepper and cook to soften mushrooms about 5-10 mins.
  • Serve sauce on top or on side.

    Chicken and Dumplings



    Friends rave every time I make this recipe. It's comfort food, and I especially enjoy making it on cold or rainy days. I often use a whole chicken cut into pieces and skinned. You can make the store-bought chicken stock taste more like homemade by adding some fresh herbs and parsley and simmering until it's reduced by half. ****add a small can of corn. I doubled it as it just did not seam to be enough for a family of 5 plus we like leftovers. **** To save time, I shredded the white meat only from store bought rotisserie chicken. I also used low fat low cream of celery soup instead as well. **** To up the flavor and the heartiness, I add three cloves of garlic, 2 chopped carrots, 2 diced celery stalks, one diced potato and add a bay leaf while it boils. Enjoy with a nice light red wine!**** I used 2 cloves of garlic and pre-made buttermilk biscuit dough ****make the dumplings to the box recommendations vs. the recipe.


    Cooking spray
    1 cup chopped onion
    1 garlic clove, chopped
    1/4 cup dry sherry
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    2 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
    1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted
    4 pounds chicken pieces, skinned
    1 cup frozen green peas
    1/4 cup water
    2 tablespoons cornstarch

    Dumplings:
    2 cups baking mix (such as Bisquick)
    2/3 cup fat-free milk

    Remaining ingredient:
    Chopped parsley (optional)

    Heat a Dutch oven coated with cooking spray over medium-high heat. Add onion and garlic; sauté 5 minutes. Stir in sherry and the next 4 ingredients (sherry through soup), and bring to boil. Add chicken pieces; bring to a boil. Cover, reduce heat, and simmer 35 minutes or until chicken is tender.

    Remove chicken pieces from cooking liquid. Place chicken in a bowl, and chill 15 minutes.

    Remove chicken from bones, and cut meat into bite-size pieces. Discard the bones. Add chicken to pan; stir in peas.

    Combine water and cornstarch in a small bowl; stir with a whisk. Add cornstarch mixture to pan; stir well.

    To prepare dumplings, combine baking mix and milk. Drop the dough into chicken mixture to form 16 dumplings. Bring to a simmer; cook 20 minutes, stirring occasionally. Cover and cook for 10 minutes or until the dumplings are done. Garnish with parsley, if desired.



    Yield: 8 servings (serving size: 1 1/2 cups chicken mixture and 2 dumplings)

    Chicken & Artichokes & Sundried Tomatoes

    Active Time: 20 Minutes Total Time: 20 Minutes Makes 4 servings
    INGREDIENTS
    1/2 cup flour, for dredging
    1-1/2 tablespoons vegetable oil
    2 whole chicken breasts, split in half to equal 4 pieces, all skin, fat, and bones removed
    1-1/2 teaspoons finely chopped garlic
    2 tablespoons chopped fresh parsley
    1 cup fresh, frozen, or canned cooked artichoke hearts or bottoms
    1/4 cup thinly sliced sun-dried tomatoes
    1/2 cup chicken broth
    Parsley, for garnish
    DIRECTIONS
    Place the flour in a shallow bowl. Heat the oil in a nonstick pan. When the oil is hot, dredge the chicken in the flour, tap off the excess, and sauté until golden brown, about 2 to 3 minutes on each side. Pour off the oil and add the garlic to the pan with the chicken, stir to combine. Add the parsley and salt, artichokes, and sun-dried tomatoes. Stir to combine.

    Add the broth and bring to a boil. Cover, lower the heat, and simmer for 5 to 8 minutes, turning the chicken 2 to 3 times until cooked through.

    Place the chicken on plates, arrange the artichokes and tomatoes around the chicken, and pour the sauce over all. Garnish with parsley.

    Mediterranean Chicken*****

    6 - 8 boneless chicken breasts
    1/3 cup extra virgin olive oil
    4 - 6 garlic cloves, minced
    1/4 cup fresh parsley
    1/2 cup ripe olives, pitted and sliced
    1/3 cup dry red wine
    2 - 14 oz. cans diced tomatoes
    2 tsp. dried oregano
    2/3 cup Feta or goat cheese

    Heat oil in a large skillet and add garlic and chicken. Simmer until chicken juices are no longer pink. Add parsley, olives, red wine, diced tomatoes and oregano. Simmer for 15 minutes over low heat. Sprinkle with Feta or goat cheese and allow cheese to melt, Serve with rice or pasta. We had this over the past weekend and it was just great. It even passed the Jungle Boys test (our 7 and 9 year olds liked it).

    The Skinny: Feta and goat cheese are lower in fat than most cheese and the little bit of oil is olive oil which is better for you than other oils. You could cut out the olives but they really do add flavor, color and texture to this dish. We used whole wheat pasta which is supposed to be good for you.

    All-In-One Potato Bake

    • 4 x potatoes, cut into wedges
    • 1 x eggplant sliced
    • 1 x onion sliced
    • 1 x peppers sliced
    • 4 x chicken pieces
    • 1/4 cup Kraft Zesty Italian Dressing
    • 1/2 cup Kraft 4 Cheese Italiano Shreds
    Directions:
    1. PLACE potatoes, eggplant, onion and peppers on foil-lined baking sheet. Place chicken on top of vegetables.
    2. COAT with dressing. Bake at 450°F for 30 minutes or until potatoes are tender and chicken is cooked through.
    3. SPRINKLE with cheese during the last 5 minutes of baking.
