Black Bean Soup (Real Simple) *****

3 T olive oil
1 sm yellow onion, chopped (1/2 c)
2 garlic cloves, minced
1 t ground cumin
1 large stalk celery, chopped (3/4 c)
1 large carrot, chopped (3/4 c)
4 c chicken stock
2 x 15 oz cans black beans, rinsed and drained
juice from 1 small lime
1 T tomato paste
salt
sour cream, salsa, cilantro (for serving)
In stockpot heat oil, onion and garlic and cook until tender. Stir in cumin and cook 1 mon. Add celery, carrot, stock and beans. HEat to boiling, Reduce to low, cover and simmer 15 mins. Stir in lime juice and tomato paste. Puree beans. Taste and add salt. Serve with sour cream, salsa and cilantro.
Serves 4.
Serve with Jalapeno corn bread.
