My Fried Rice *****

Serves 2
1 c. rice, cooked (not wet)
1 T canola oil
1/2 carrot, shredded
2 green onions, chopped
1 clove garlic, minced
1/4 t shredded ginger
1/2 c frozen peas
3 egg whites + 1 egg, beaten
1/8 c teriyaki sauce (or more to taste)
Cook rice and fluff up so it's handy to dump into the wok. Heat oil in wok on high and saute carrots and scallions. Add ginger and garlic but dont let them burn. Add peas, and just when they start to thaw, add egg. Toss around until egg is mostly set, then dump in rice and continue to toss. Add teriyaki and toss. Serve.
