Grated Gazpacho

Serves 4-6

3 cucumbers
3-4 ripe tomatoes
2-3 green and red bell pepper
1 med mild onion
1 garlic cloves fine chopped
3-4 c tomato juice or v-8
1/4 c red wine vinegar
1/4 c oilive oil
tobasco
salt
chopped fresh basil, parsley or tarragon
croutons
(opt glass of dry sherry)

Scoop out all seeds. Grate. stir in other ingredients. Season. Add a few ice cubes.
